Takayuki Hyodo / BI Factory Yokohama
Joined the company in 1988.
After working in Western cuisine, he took charge of all food categories except coffee shops.
He has won numerous awards in internal technical competitions, including first and second place, for dishes featuring fish. He also has a history of winning and placing second in fishing tournaments as a hobby. "I'm good at cooking fish as well as catching them, but I'm not good at eating raw fish like sashimi, and there are some fish I've never eaten. My competition entries have always been consistently fish-themed!"

Creator's Comment
I want to make other anglers happy.
Production begins by acquiring the real objects that will serve as the prototypes.
To use fresh fish as prototypes, I caught them myself or received them from fellow anglers. The fish eyes were crafted to match each individual fish, and the environment they inhabit was also reproduced to create a single piece of art.
Utilizing techniques unique to food samples, I incorporated expressions such as the fish's movement and three-dimensionality, which cannot be achieved with taxidermy.

Creator's Comment
He's a rough guy, but deep down he's nervous and timid.
Also known as "Nobushi" (wild warrior), the black sea bream is a rough and tough fish. Yet, it also has a delicate and timid side.
Among all fish with "tai" in their name, this species is the closest to humans. It is omnivorous and will eat surprising things like watermelon and fish sausage.
Using a fish received from a fishing friend, I individually crafted each scale. This is the largest piece in the "Handmade Fish" series.
