Strawberry daifuku, a perfect match of sweet red bean paste and large sweet and sour strawberries.
We pursued a quality that would convey the taste even if you couldn't eat it, and after much trial and error, we finally completed it.
We added a powder texture to the thin and chewy mochi skin, and chose coarse red bean paste to give it a three-dimensional effect.
This item is packed with the craftsman's attention to detail.
We regularly visited greengrocers and strawberry picking farms in search of large, slightly rounded strawberries that would suit the plump daifuku.
Combining the wisdom and ingenuity of the craftsman, a vibrant and juicy cross-section of strawberries was created.
