Takayuki Hyodo / BI Factory Yokohama
Joined the company in 1988.
After working in Western cuisine, he took charge of all food categories except coffee shops.
He has won numerous awards in internal technical competitions, including first and second place, for his fish-themed dishes. He also has a history of winning and placing second in fishing competitions, which is his hobby. "Not only am I good at fishing, but I'm also skilled at cooking fish dishes. However, I'm not a fan of eating raw fish, like sashimi, and there are some fish I've never even tried. My competition entries have always been consistently fish-themed!"

Creator's comment
I want to make other anglers happy.
Production begins by acquiring the real objects that will serve as the prototypes.
To use fresh fish as prototypes, I caught them myself or received them from fellow anglers. The fish eyes were crafted to match each individual fish, and the environment they inhabit was also reproduced to create a single piece of art.
Utilizing techniques unique to food samples, I incorporated expressions such as the fish's movement and three-dimensionality, which cannot be achieved with taxidermy.

Creator's comment
It's my favorite fish.
Flounder is my favorite fish; I once caught one that was 52 cm long. I find their unique shape, unlike other fish, fascinating, and I've been fishing for them since middle school.
They prefer shallow, sandy-muddy bottoms and are abundant in Hokkaido and the Tohoku region.

Creator's comments
Not just flounder, but that creature too
The shallow sandy mud where they live is also reproduced.
The starfish that accompanies it is originally a bit more brownish, but I made it a little lighter in color to balance the overall look.
