Takayuki Hyodo / BI Factory Yokohama

Joined the company in 1988.
After working in Western cuisine, he took charge of all food categories except coffee shops.
He has won numerous awards in internal technical competitions, including first and second place, for his fish-themed dishes. He also has a history of winning and placing second in fishing competitions, which is his hobby. "Not only am I good at fishing, but I'm also skilled at cooking fish dishes. However, I'm not a fan of eating raw fish, like sashimi, and there are some fish I've never even tried. My competition entries have always been consistently fish-themed!"

Creator's comments

I want to make other anglers happy.

Production begins by acquiring the real objects that will serve as the prototypes.
To use fresh fish as prototypes, I caught them myself or received them from fellow anglers. The fish eyes were crafted to match each individual fish, and the environment they inhabit was also reproduced to create a single piece of art.

Utilizing techniques unique to food samples, I incorporated expressions such as the fish's movement and three-dimensionality, which cannot be achieved with taxidermy.

Creator's comments

The key is to express transparency.

I wanted to add a colorful fish to the lineup, so I chose the Amadai. This fish lives in burrows in fine sand at depths of 60 to 150 meters.
It's called "Guji" in Kansai and is a popular food fish.

It was challenging to express its vivid body color and translucency with coloring.

Creator's comment

What is this?!

The serpentine object on the pebbles is a tube worm's nest. While their natural habitats differ from tilefish, I included it as an accent since it was incidentally caught while fishing.
